Will You Be My Valentine?

What love and roses? Can you believe it is that romantic highlight of the year again. Luckily for me I have to celebrate it with the Mayan mountain spirits, there is no Monday without a quality study session.  At least I’m getting smarter than yesterday.

But for those of you that have something planned, perhaps a blind date or a romantic evening with someone who cares for you. Here is a recipe made for the perfect Valentine.

The Ultimate Strawberry Shortcake

  • 1 quart fresh strawberries (or more if you like)
  • 1/2 cup sugar
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 ounce) container frozen whipped topping
  • 1 (14 ounce) angel food cake, cut into cubes (I buy the cake already made, in Scandinavia already made bottoms of “bløtkake” is fine)

    Wash the strawberries, cut them in half. Add sugar and let them rest. Then beat the cream cheese together with the powered sugar. Fold in the frozen whipped topping with the cake cubes. Spread the cake into an ungreased 13×9 dish. Cover and let it rest for about two hours. Cut into squares and decorate with the strawberries. Enjoy!
